We’ve been building up to this one. Friday 16 October, two bartenders from Sips are working our bar for one night.
If you follow cocktails at all, you already know: Sips is No.3 on The World’s 50 Best Bars and No.3 on the first Europe’s 50 Best Bars list. It was crowned the world’s best bar in 2023. Founded in Barcelona by Simone Caporale and Marc Álvarez, it is the bar every other bar measures itself against.
For one night, two bartenders from the Sips team bring their drinks to our counter on Carrer de Císcar 26. Doors at 19:00.
Come early. A word of warning from experience: Drink Kong drank us completely dry an hour before closing. Cooktl and Apotheke packed the room. This is the biggest name we have ever brought in, and we have the same number of seats we have always had.
The guest shift series
Since we opened we have been writing to bars we admire until they said yes. Sips is the fourth to say it.

Gato Negro is an owner-run cocktail bar on Carrer de Císcar in Valencia’s Eixample. There are three of us — Aleks, Polina and Oleksii — and one of us is behind the bar every night. Oleksii makes the drinks and owns a share of the place. We make everything in house, from the ice to the cordials, and there is vinyl on all night.
